He is a local deer hunter, curbing the dangerous deer population in my area of New Jersey (for perspective, three of my coworkers have hit deer in my area on the highway in the past year, and I have hit one two years back). I understand opinions vary on hunting: That's not what this post is about.
Bob is looking to pay college loans and buy books for his Winter semester at Bergen Community College. He's hoping that with a little hard work and elbow grease, he can make a bunch of $5 packs of jerky by the October event. If there are interested parties as well, I would also love to offer venison chili one night, Friday or Saturday after main mod, over a fire pit or stove (with permission of a land's fire pit of course.) in October or November.
My question is before we get elbow deep into the cooking process- Would anyone be willing to pay Baronial Notes for home made jerky? Would anyone be willing to pay gold for bowls of chili?
While October game is coming up fast, November has plenty of time to prepare! Bob says thank you in advance for any opinions/suggestions that come his way!

The Adventurer's Guild cabin has a fridge.. maybe you can ask whoever's in charge of the space if you can store it there till you need to eat/sell/dispense it or whatnot?

I will reach out to both of them before game for the use of storage. I'm sure something can be arranged.
Would there be any chance to buy antlers as well?
Sadly, the deer is a doe. He's able to take more does versus bucks per month, so antlers aren't an option. As far as the state of New Jersey is concerned, there are also VERY strict laws regarding deer and antlers, so he is very wary about gifting/trading (They cannot be sold for profit in NJ among other things. He knows the laws, I'm afraid I do not).

He's going to take inventory after work this evening. The bad news is right off the bat he does not want to sell any tenderloins. There is very little on a deer and he would love to cook those up for himself. Chops he may be willing to, he has to check inventory. Stew meats and ground venison? There will be PLENTY o' that, which is why I'm making chili :)

Due an issue getting our smoker/dehydrator happy, my brother won't have everything ready to go on Friday. He apologizes, and hopes everyone will wait hungrily for November, when he will have everything 110% ready to go! He should also have double the amount originally expected, thanks to a fresh target roaming around my aunt's property.
Chili, yes, in all manners of forms. I will be working with another player on that front, we'll have the details ironed out ASAP.
Stew meat and ground meat is completely up for purchase, I can double check on if there are any other cuts. He's going to scale them and price them accordingly (using local state pricing), and as always, I can make change of most any bills.

It is with much sadness that I will be seeing you all at the November event instead. Many factors, including my full-time job offering overtime, my fear of trees during hurricanes/storms (I believe they aim for me when they fall, 3 in the last five years), and my general aversion to playing a makeup-heavy character in the rain are going to keep me eastward from you all.

For those who have not had Venison, imagine the flavor of beef, except with fewer notes of fat, as it is much leaner. Depending on how it is butchered, there can also be mild(mildly irony) to moderately gamey. In short, all the advantages of red meat, without the negatives.
It is in fact so lean, you usually need to add a bit of beef if you want to make things like burgers, or beef/pork if you're looking to make sausage. Otherwise, it'll fall apart or through your grill.

I'll be up at game this
Not going to lie, I tried a bit, its fantastic. He's made a mild, and next week is testing a blend with a bit more red pepper and sriracha. That one might be far too intense for me. Please please PLEASE PM me here or if you have me on Facebook, there if you're looking for venison cuts. I'd like to sell/distribute those before lay-on if possible so that I don't have to use up valuable refrigerator space which isn't mine, though with how cold its been...my car may feel like a freezer. I have plenty of stew chunks looking for a new home, and I can actively inquire about other common cuts. I'll ask pricing with my brother per pound (he has a small scale to weigh the packs on, they appear to be 1-2lb packs on stew chunks at least.)
Thanks to everyone whose responded positively so far! I'm trying to drag my brother out to game sometime to do his own vending (He's stubborn and not into this kind of scene) but until then, he appreciates my efforts. If you're looking for me IG during/after faire, I may still have jerky left to sell. I'll be quite easy to find: Look for Aimee, the green dryad with spotted doe makeup, green fawn ears, and an antler atop her headdress.
