It isn't enough to talk about peace, one must believe it.

I'd think the answer here is simple.

Is he evil. Yes. Why? Because devs need bosses.

Sargeras was originally a Titan tasked with keeping the Burning Legion at bay.  He was eventually corrupted by his continued proximity to the demons and instead freed the demons and became their lord.
Some lore has been retconned.  Originally the Eredar were demons and were part of corrupting Sargeras.  Now they say Sargeras corrupted them to demons after his own transformation (in fact, a lot of lore was retconned just to explain the space goats)

Saurfang, however, is much easier to explain.  He's Chuck Norris re-incarnated as an Orc.

Real lore answer: he was the leader of the offensive against Ahn Qhiraj.  He is also the brother of Broxigar, a character from the War of the Ancients trilogy by Richard Knaak.  Essentially pure badassitude in corporeal form.

Saurfang is wow's equivilant to chuck norris. There's an entire page devoted to saurfang "facts".

Sargeras was a titan that was supposed to look after Azeroth. He fell, and created the burning legion. He watches Azeroth wating for his return through the eyes of Illidan.

Also, finding fun ways to connect the two, Broxigar was essential in the original defeat of Sargeras, he was able to wound Sargeras just barely enough that Malfurion, Illidan, Tyrande, Krasus/Korialstraz and Rhonin were able to distract him enough for the portal he was trying to enter through to collapse. This also had a lot to do with irregular time travel.

Silmarilion wasn't that hard to understand, just a lot of facts all at once.
