A bunch of people could chip in to buy a pig maybe? Or a couple of chickens, maybe even a turkey..or a roast?

While I would never discourage the roasting of meats over a fire, if Cory really wants Tofu, you could get a tight grill and slow roast it.

I think I am going to be leaving Wed night and get there probably around 11 PM. I will stop on the way and probably pick up a couple of chickens for roasting. That is, if we're still doing the spit roasting bit? We could have them for lunch or dinner on Thursday.

We have a turkey for the IG engagement party that could get cooked on the spit.

This spit is very IG, all cast iron and such, and can hold two chickens easy. Be aware--it takes a long time (maybe four hours) to cook up a bird on a spit. Can we do shifts?
I'll also bring along a cast-iron tripod and kettle, so we can make 9-bean-soup over the fire (looks at Coryan).
